How to keep an avocado fresh:
An enzyme in avocados causes the surface to oxidize when exposed to air, turning it a brown color. To keep an avocado from turning brown, limit the exposure of the cut surface to oxygen.

The Pit Method
- Leave the pit in the avocado
- After you cut the avocado, immediately immerse it in ice cold water
- Squeeze a small amount of fresh citrus juice (lemon or lime juice works best) over the avocado
- Press a piece of plastic wrap over the cut surface and stick it in the refrigerator
